I dag er det verdens brøddag, og da benytter jeg sjansen til å legge ut vår oppskrift på hjemmebakt brød. Denne ble opprinnelig publisert i mars 2011 men er jo like god i dag!
Jeg er så heldig at jeg er gift med en som liker å bake brød, så her i huset er vi bortskjemt med nybakt ukentlig. Brødet er veldig godt og saftig. Hjemmebakt metter mer enn butikkjøpt, og det holder seg godt lenger også.

Her er oppskriften vi bruker:
100 g linfrø (gjerne knust)100 g helkorn hvete
Legges i bløt 30 min før baking.
1 dl kruskakli
1 dl hvetekli
1 dl solsikkefrø
200 g grovmalt rugmel
200 g sammalt hvete grov
400 g byggmel
600 g hvetemel
1 pk tørrgjær
2 ss honning
2 ts salt
2 ss rapsolje
1 l vann ca 38 grader
Eltes i maskin i 10 min.
Forheves i bolle med lokk eller under plast på et lunt sted i 30 minutter.
Fordeles på 3 brød. Vi bruker brødformer.
Heves på nytt under plast på et lunt sted i 30 minutter.
Stekes på på 225 grader i 40 minutter nederst i ovnen. Avkjøles på rist.
Vi begynte å bruke byggmel etter å ha sett en dokumentar på tv for flere år siden om helsegevinstene ved bygg. De sa til og med at det kan virke forebyggende mot kreft! Byggmel er veldig
næringsrikt og inneholder mye fiber, protein, jern og B-vitaminer. Men for å få skikkelige bakeegenskaper ut av byggmelet må det blandes med hvetemel. Man skal ikke bruke mer enn 40 prosent byggmel i bakst som skal heve, men flat mat som lomper og tortilla kan lages bare med bygg.
